Südtirol ist ein Ort der Begegnung und zugleich Schmelztiegel zweier kulinarischer Traditionen, der Alpinen und der Mediterranen.

Das Talent und Kreativität unseres Chef Kochs Stefano ermöglicht es uns, abwechselnd die Köstlichkeiten der traditionellen Südtiroler Küche mit typischen Mediterranen Gerichten anzubieten. Mit Begeisterung und Leidenschaft für das gute Essen kreiert unser Chef Koch auch gerne originelle Gerichte. Sie haben die Wahl.
Neben der Kochkunst legen wir viel Wert auf Grundzutaten. Wenn es die Saison erlaubt, kaufen wir ausschließlich von lokalen und regionalen Anbietern, vom Käse über Gemüse bis hin zu Fleisch, wo wir der Philosophie "von Kopf bis zum Schwanz" folgen und alles verwerten. Dies ist uns wichtig und ein besonderes Anliegen.

Für typische nicht-regionale Lebensmittel verpflichten wir uns, sie direkt von sorgfältig ausgewählten Produzenten zu kaufen, wie Essig, Parmigiano Reggiano, Olivenöl .....Wir achten hierbei insbesondere auf die Zutaten und verwenden nur Produkte die wir auch für uns und unsere Kinder verwenden würden.
Die meisten Teigwaren werden von uns hergestellt, von kurzen, langen, gefüllten Eiernudeln, von unseren Köchen täglich gefertigt, Fleisch, das in unseren Zellen gereift ist, Bio-Reis und im Sommer das Gemüse vom Bauern.

Unsere Weinkarte bietet eine große Auswahl von Winzern aus Südtirol, die wir persönlich ausgewählt haben, aber wir haben auch eine besonders gut sortierte Weinkarte von prämierten italienischen Weinen; in Bezug auf Grappa, Digestifs und Spirituosen, sind wir immer auf der Suche nach originellen und lokalen Produkten.

Besondere Aufmerksamkeit widmen wir unseren Gästen, die laktosefreie oder glutenfreie Lebensmittel wünschen. Wir bitten Sie uns vor Ihrer Ankunft darüber zu informieren.
