However, we would also like to offer our guests perfected Mediterranean cuisine. Our talented chef fuses these two traditions, creating new and extraordinary dishes. We pay close attention to the ingredients used, following a simple principle: We only purchase products that we would personally use when cooking for our own children. Likewise, when buying products, we buy from local suppliers. Following these principles is important to us.
After purchasing local products, they are processed by our creative and talented chefs. For example, 90% of the pasta dishes are made in-house, including our short noodles, long noodles, and stuffed noodles. We also make our own local dishes, such as Canci and Tirtlan. Our rice is of biodynamic origin, the meat grown regionally and processed by the local butcher, and our desserts, of course, are also homemade.
We likewise pay special attention to lactose-free and gluten-free foods. Please inform us before arrival if you adhere to special dietary restrictions. Our menu likewise offers a selection of vegetarian dishes.

The wines we offer, for the most part, are from South Tyrolean winemakers. We are always trying to find new products. We equally try to find new options in terms of spirits, while trying to balance external and South Tyrolean specialties.
