Our Culinary Proposals

We grew up in these mountains and have known this mountain world since childhood. We are happy to share these experiences with our guests and personally guide them in our Dolomites, for relaxed days during your holiday.

Iconic Dishes: Tradition on the Plate

Although our menu changes daily, there are pillars of Ladin cuisine that define our identity and regularly return to delight our guests:
  • Tirtlen: the queens of Ladin street food, elevated to a gourmet dish. Crispy rye flatbreads filled with fresh ricotta and mountain herbs (spinach, chives) or sauerkraut.

  • Canci Checi (Cajincí Aréstis): the famous potato half-moons. Fried dumplings with a soft core of ricotta and Puster Valley potatoes – a "Comfort Food" that tells centuries of history.

  • Knödel (Balotes): but not the usual ones. We offer them in seasonal variations – pressed or in broth, with speck, grey cheese or beetroot.

When inspiration guides the pen, unique dishes are born that you’ll only find at Taibon 1885:
  • Parsley root ravioli: served with a carpaccio of house-smoked salmon trout. A play of sweetness and delicate smoky notes.

  • Arolla pine gnocchi: tricolour gnocchi, smoked with real Arolla pine wood (the “Queen of the Alps”), served with morel mushrooms and cave-aged Alpine cheese. It’s like eating a walk through the forest.

  • Fior di Latte ice cream with mountain pine: a fresh, balsamic dessert, served on a shortcrust pastry made with Alpine butter and buckwheat.

Special Dietary Needs: Gluten-Free and Vegetarian

Enjoyment must be accessible to everyone. We are proud to offer an inclusive experience without compromise on taste:
  • Gluten-free cuisine: on request, we prepare gluten-free versions of our typical dishes, guaranteeing safety and full flavor for our guests with celiac disease.

  • Vegetarian options: vegetables are not a side dish here – they are the star. Our menu always includes creative and balanced vegetarian main courses.

  • Dietary intolerances: simply inform us of your needs (e.g. lactose intolerance) at the time of booking – we will create delicious alternatives for you.

The “Gourmet Half-Board” Formula

For guests of Hotel Monte Paraccia and Pension Pè de Munt, dinner at Taibon 1885 is the highlight of the day. Forget the cliché of the “hotel canteen”. Our Smart Half-Board Formula includes:
  • Rich buffet with salads and cold starters, fresh vegetables and home-made dressings.

  • A 3-course menu: choose between various options (Meat, Fish, Vegetarian) for starter and main course, plus dessert.

  • Themed evenings and gala dinners, to celebrate the flavors of the season. This is the opportunity to experience a complete gastronomic journey – already included in the price of your stay.
