Our Wine List
A curated selection of local, national and international labels to perfectly accompany every dish.

A Unique Terroir in the World
No dish, however perfect, is complete without the right wine. South Tyrol is a land of contrasts: the Mediterranean warmth of the valley floors meets the Alpine freshness of the peaks. This unique microclimate yields wines of character that are celebrated internationally. The cellar at Restaurant Taibon 1885 is a tribute to this richness. We have selected the finest regional labels for you, prioritizing small producers who share our philosophy of respect for nature.

Reds: Structure and Elegance
Lagrein: the quintessential native grape variety. Dark, velvety, with notes of forest fruits and bitter chocolate. Ideal with our tris of kid goat or aged cheeses.
Pinot Nero (Blauburgunder): South Tyrol is the chosen Italian home for this noble and challenging variety. We offer elegant and complex selections, perfect for our most refined dishes.
Schiava (Vernatsch): a light, easy-drinking red — the historic companion for a traditional Ladin snack and pasta dishes.
Whites: A Symphony of Aromas
Gewürztraminer: aromatic, spicy, and unmistakable. Try it with our Tirtlen or with dishes featuring bold mountain herbs.
Kerner and Sylvaner: fresh and vertical wines from the Valle Isarco, perfect for starting your dinner or as a companion to freshwater fish.
